No-work Vegan Stir-fry
Test week is over! Yaas. It's been real fam. Not only has it been test week but David passed a kidney stone yesterday (I really can't stop laughing about this - pretty sure kidney stones are not for people under 55). Needless to say we are both exhausted, David is more high on pain meds than tired but you know, same same. Taking our states of complete 'meh-ness' into consideration we really didn't feel like bringing out the fancy chopping board (the only chopping board we own) and doing a whole bunch of food prep, so we decided on a stir-fry! This recipe doesn't involve much work at all and it's crazy yummy!
For those of you who are in deep deep times financially (by the way - I'm drowning with you), you don't need to buy the meat replacements; you can just put a tin of chickpeas into the mix and you've got some protein. Also, you can buy any type of frozen stir-fry mix you may want (we go for Hawaiian because Davey likes himself some pineapple).
This recipe makes about 4 meals.
Ingredients:

- 500g of stir-fry mix (can be frozen or fresh)
- 1 bag of Qourn vegan savoury pieces or ½ a bag of Frys vegan chunky strips
- 2 bags of 2 minute noodles or normal spaghetti
- A bag a baby spinach
- 125 ml Soy sauce
- 100 ml vinegar (we use white rice vinegar)
- Equivalent of 2 teaspoons chopped fresh ginger
- 1 ½ tbsp. of sweet chilli sauce
- 1 tbsp. brown sugar
- In a large frying pan or wok, heat some oil on high and fry the stir-fry mix and vegan pieces
- In a separate bowl cover the 2 minute noodles in bowling water and leave till cooked through
- Mix all the ingredients for the sauce together and then pour of the stir-fry mix and turn the heat down slightly
- Add the bag of spinach and allow to break down
- Add the noodles and mix into the stir-fry
- Serve while still hot
