Easy Chickpea & Mayo Toasties - perfect for the crazy-busy days!
It's test week! I don't know how it's test week - pretty sure I literally just got off the plane from vac 0.5 seconds ago - but alas ... it's the week of tests. The week of consequence - all those empty promises of "summarising each lecture" made... by me to me. Sigh.. I've played myself fam - we've all played ourselves. Lets all cry together.
Ahhh and in the chaos of this we must now 'adult'? We have to feed ourselves too? We have to contemplate life and all our bad decisions while having to take care of ourselves? It cannot be done! There shall be no existential crises on an empty stomach so we have come up with a solution! The most wonderfully simple, cheap, quick and student-budget-friendly meal to date: Chickpea mayo toasties!! Yaaaas! Credits to Pablo Rees for this recipe (we have adapted it a little).
I like to equate these to chicken-mayo toasties (which used to be a favourite of mine) - haha.. get it? CHICKen mayo. I'm funny.
David just likes them because he has something to dip into his mayo-sweetchilli sauce which he makes himself and actually bottles now (Babe, I see you). We often just decide that we feel like toasties and whip them up for lunch and sometimes for dinner when we are feeling especially lazy (Sorry mom!).
Prep and cook time: 15 minutes
Cost: R25
Makes 4 sandwiches (2 servings)

Chickpea and mayo toasted sandwiches
Ingredients:
- 1 x can of chickpeas
- Salt (we like to use Herbamare salt which has herbs added)
- Mixed herbs
- Vegan mayo (B-well brand or Taysti brand)
- Bread (Doesn't work too well with seed-breads)
· Optional:
Nutritional yeastMethod:
- Drain and rinse the chickpeas thoroughly
- In a frying pan, heat some oil and then fry the chickpeas with salt and mixed herbs until toasted slightly (use salt and mixed herbs to desired flavour)
- Place chickpeas in a bowl and mash with a fork
- Add mayo and mix to desired flavour and consistency
- Butter one side of bread if desired and fill with chickpeas
- Toast until golden brown
· Optional: Sprinkle some nutritional yeast over filling before toasting to give a cheesy texture/flavour
