Vegan Mealie bread (Corn bread)

This recipe has a good memory attached to it because it was through this that I discovered David's love for baking. I came to his residence to visit one afternoon after varsity, only to discover him super chuffed with himself and his mealie-bread - not to mention them being in the shape of little owls (LITTLE OWLS). It was damn delicious and a really convenient recipe to discover because we had a braai coming up! It's always nice to have a recipe that everyone can enjoy when you go to have dinner somewhere else and want to bring something to contribute.

This recipe was also an avenue of discovery for David as he discovered my slightly unhealthy obsession for apple Purity - I love the stuff. You will notice that there is apple purity in this recipe, David discovered that you can use it instead of oil. I picked the half-used jar up off the table a polished it off to Davids utter disgust - it was beautiful.

We haven't worked out the price for this recipe but when we do I will edit and add it in - just keep in mind that we are all about saving so it really is a cost-effective recipe.

Mealie Bread 


Ingredients: 


  • tbsps of vegan buttery spread melted 
  • 1 ½ cups of mealie meal 
  • 1 cup of flour  
  • 3 ½ tsps baking powder 
  • tbsps apple purity 
  • 2 ½ tbsps sugar 
  • 1 ¼ tsps salt 
  • 1 1/8 cups non-dairy milk 
  • 1 can of corn in brine rinsed thoroughly 
  • Mixed herbs 


Method: 

  1. Preheat oven to 180 degrees  
  2. In a large bowl, mix together mealie meal, flour, sugar, salt and baking powder 
  3. Add the purity, vegan buttery spread and non-dairy milk and stir till combined
  4. Add the can of corn and stir in until well distributed 
  5. Pour mixture into bread pan, top with mixed herbs (or other herbs of choice) and bake until an inserted toothpick comes out clean 

Optional: use a muffin pan if you would like a few mini breads instead
  
Cook time: 30-40 minutes
