Vegan Banana Bread
Here's another one of David's faves - it may just be his ultimate favourite actually. I say this because i'm sure he baked it last week and there is already a new batch of bananas ripening in his kitchen at the moment. (My inner fatty never complains though)
This recipe really does show how 'normal' - so to speak - eating this way can be. You wouldn't notice the difference between this or a banana loaf with dairy products.
Here it is! Nice & simple.
Banana bread
Ingredients:
- 425ml (225g) flour
- 2 ½ heaped tsp baking powder
- 120ml (100g) sugar
- 2 tsp cinnamon
- 3 large black bananas mashed
- 80ml oil
- 1 tsp vanilla essence
Method:
- Preheat oven to 200 degrees
- Mix bananas with oil and sugar
- Add the flour, baking powder and cinnamon and mix until combined
- Pour mixture into bread tin and bake for 20 minutes
- If it starts browning on top, cover with tin foil
- Bake for another 40 minutes approximately but check regularly
Cook time: 1 hour 10 minutes approx.
