Vegan Banana Bread

Here's another one of David's faves - it may just be his ultimate favourite actually. I say this because i'm sure he baked it last week and there is already a new batch of bananas ripening in his kitchen at the moment. (My inner fatty never complains though)

This recipe really does show how 'normal' - so to speak - eating this way can be. You wouldn't notice the difference between this or a banana loaf with dairy products. 

Here it is! Nice & simple. 

Banana bread 
Ingredients: 
  • 425ml (225g) flour 
  • 2 ½ heaped tsp baking powder 
  • 120ml (100g) sugar 
  • 2 tsp cinnamon 
  • 3 large black bananas mashed 
  • 80ml oil 
  • 1 tsp vanilla essence 
Method: 
  • Preheat oven to 200 degrees 
  • Mix bananas with oil and sugar 
  • Add the flour, baking powder and cinnamon and mix until combined 
  • Pour mixture into bread tin and bake for 20 minutes 
  • If it starts browning on top, cover with tin foil 
  • Bake for another 40 minutes approximately but check regularly 

Cook time: 1 hour 10 minutes approx.
